There’s nothing better during the colder seasons of fall and winter than a comforting cake, and with its extra coffee kick this one’s perfect as a chilly morning-time treat! This simple recipe courtesy of Great Harvest in Spokane makes two 3oz. cakes, so you can layer them, eat them separately, or give one as a gift.

Ingredients:
4 oz./1 stick butter
¾ cup sugar
2 large eggs
2 tablespoons treacle/molasses
2 cups self-raising flour
¾ cup strong black coffee
2 tsps cinnamon
¼ tsp ground cloves, and a decent pinch of salt 

Method:
- Preheat your oven to 350 degrees F.
- Beat the butter and sugar together, adding the eggs one at a time, until you have a smooth mixture.
- Add the treacle/molasses and mix together well.
- Sift the dry ingredients together in a large bowl.
- Fold the dry ingredients into the mixture, slowly adding the coffee as you mix.
- Grease two cake tins and pour the mixture into them.
- Bake for 25 minutes, or until a skewer inserted into the cakes comes out clean.
- Remove the cakes from the oven and leave them in the tins for a while to cool slightly; remove from the tins and place on a wire rack to cool completely.
- Now you can layer them if you wish, or ice them, or just leave them as they are already delicious!

If you don’t fancy making two cakes, use half the measurements to make one, or perhaps try making cupcakes instead. Of course you should feel free to experiment with adding chocolate chips and/or chopped nuts, or anything else you desire.
