During these cold winter months, it is so great to come home from working hard and have something warm and delicious waiting for you. It’s also a great time of year to enjoy the seasonal vegetables that are out there for the choosing. Today at Great Harvest in Spokane we would like to offer one of our favorite recipes for a super simple Winter Vegetable Medley, easily created with some of those seasonal winter vegetables we love. Follow these simple steps, and don’t forget to check out our menu to see which bread options will work best with your deliciously roasted feast! 

The Ingredients: 

1 pound of peeled carrots
1 pound peeled parsnips
1 large peeled sweet potato 
1 small peeled butternut squash-also deseeded
3 tablespoons of Olive Oil
1 ½ teaspoons salt
½ teaspoon black pepper
2 tablespoons chopped parsley 

Cooking Instructions: 

1. Cut the peeled carrots, parsnips, sweet potato, and squash into cubes of about 1 inch
2. Use two baking sheets to spread the vegetables on
3. Drizzle them with olive oil and other seasonings
4. Toss well
5. Bake the vegetables for about 30 minutes, watching the vegetables and seeing that they are tender
6. Turn once while baking
7. Lastly, sprinkle them with parsley and add seasoning as you desire.
